Created in the 1930s, the banh tom were sold on the banks of Ho Tay (West Lake) by street vendors. Over time, this dish has gained its reputation and has become a symbol of Hanoi gastronomy that tourists cannot miss once in the capital.
While delicious, these donuts should be paired with the sweet and sour sauce for added flavor. They are served with salad, cilantro, cucumber, green papaya and fish sauce.
The banh tom are served with salad, cilantro, cucumber, baby papaya and fish sauce. The latter, essential, is supposed to reveal "the soul of the dish".
It is composed of fish brine, sugar, vinegar and pieces of carrots and sprout (or young papaya). Depending on taste, you can add spice for lovers of spicy cuisine.
Shrimp fritters

Ingredients

* Trim
400 g of prawns
1 large sweet potato
½ teaspoon of sugar
½ teaspoon of salt
Pepper
* Batter
150 g of wheat flour
50 g of rice flour
40 g of corn starch (Maizena)
½ teaspoon of turmeric
powder to yellow the dough

2 eggs
280 ml of sparkling water
2 liters of vegetable oil
* Sauce
5 tablespoons of cold water
3 tablespoons of sugar
3 tablespoons of nuoc mam (fish sauce)
1 chili
5 garlic cloves, chopped
2 tablespoons of vinegar
* Support
1 carrot
½ green papaya
2 tablespoons of sugar
3 tablespoons of vinegar
1 teaspoon of salt
Salad leaves
Aromatic herbs:
mint, coriander, shiso (perilla)
Preparation

* Shrimps
- Wash the shrimp then remove the head and legs. Marinate them with salt, pepper and sugar. Mix everything together and marinate for 30 minutes.
* Batter
- In a large bowl, mix together the wheat flour, the rice flour, the cornstarch, the ground turmeric, the pepper, then the beaten eggs.
- Pour in the sparkling water in small quantities, stirring until the dough is smooth, without lumps. Let sit for 30 minutes. Grate the potato into julienne then mix into the dough.
- In a skillet or saute pan, pour the oil and heat over medium heat. Using a ladle, take a little dough and place two shrimp on top. Pour it into the heated oil pan. After a few minutes, turn the dough which is now solid. Then cook for a few minutes until the donut is golden. Do the same with the rest of the dough and the shrimp.
* Support
- Wash, peel the carrot and the green papaya. Cut the carrot into thin slices. Slice the green papaya into several pieces and cut them into thin slices. In a large bowl, combine the sugar, vinegar, and salt. Add the raw vegetables and mix well. Let marinate for about 45 minutes.
- Clean the salad and the aromatic herbs.
* Sauce
- Combine the sugar, vinegar, water, then the fish sauce. Stir so that the sugar dissolves. Add the garlic cloves and red pepper (amount to taste).
- Enjoy hot with the sauce and aromatic herbs.
